Q: What is inexpensive, delicious and oh-so nutritious?
A: Sweet potatoes!!! These readily available vegetables are antioxidant rich and contain vitamin D, iron, calcium and potassium! They’ve been a part of our healthy family dinners for years. Make them yours too with this yummy recipe for Cinnamon-Garlic Mashed Sweet Potatoes.
- 3 Small Sweet Potatoes or 1 Large
- 1/2 tsp Cinnamon
- 1/2 tsp Nutmeg
- 1/2 tsp Himalayan Pink Salt
- 1/2 tsp ground pepper
- 1 Garlic Clove (minced)
- 2 Tbsp Coconut Oil
Just two simple directions:
- Peel, slice and boil sweet potatoes in a medium size pot until soft.
- Mash potatoes well adding in all the ingredients.
Serve as a wonderful side to any family meal. Feel free to add a little more salt, pepper or garlic depending on how strong you prefer the taste. I try to keep it on the low side so that our munchkins enjoy them as well and then my hubby and I can add a little extra.
